White peppercorns and black peppercorns both begin as the same berry on the same pepper plant. Yep, that’s right! They’re a fruit! However, the processing of the peppercorns is different. To produce white peppercorns, this outer layer is removed before or after drying, leaving only the inner seed. The taste of white pepper is brighter, sharper, more herbaceous but is less complex with fewer flavor notes than black pepper.
